This is a personal bias list based on my own history which is mostly Nintendo. More recently I have been playing other games not Nintendo related but even so I haven't played every game out there. If your boss fight that you think should be on this list isn't, chances are I feel the ones I picked are better, or I haven't encountered them in a game I've beaten. Also possible spoilers.
Praise? To God of War II?? WHO ARE YOU!? This is what you are probably yelling to me through your screen. Let me clarify. I have my issues with God of War II, but I never said I hated it. 6 out of 10 is the lower spectrum of good in a game, but there was good in the game. That being said, the stupid quick time events is what kept this fight from getting any higher. See, Alrik is a powerful foe and is a foe Kratos killed in his past, however he returned to bother Kratos once again, this time with the souls of the undead summoned by a large hammer. Interesting boss fight story wise, and the fight itself is great up until the quick time events kill you several times.
All of these lists are based off of types of pokemon, so of course undead is here as well. The toughest boss of ghost pokemon training variety that I've fought has to be this old bat. Given most of her ghosts are the same pokemon family tree, but she is still tough.
When it comes to ice fights, or just the bosses in general, I feel Crystal King is far more fun and interesting then Bonechill, hence why Bonechill wasn't on the ice list. That being said, Bonechill is still a fun boss fight, and since he is undead... sort of.. he fights well here. The only issue I have with him is that there is no mystery or set up behind him. Crystal King at least had "mysterious ice palace" this guy you fight in the clouds because reasons. At least the fight was fun.
Born on a Monday am I right? I love the version of Grundy, created by the Lazarus that Ra's used to experiment on him. Now he is a decrative toy in Penguin's basement. While I didn't care much for the fight itself, the set up for this guy is awesome, and his background story has a lot of heart into it. Also Batman ripping out his actual heart was pretty cool. His design, set up, and back story are awesome, he'd have been higher if he was funner to fight.
Figuring out the hammers was a pain in the butt for me. Outside of that the Golden Diva, the final boss fight from Wario Land 4 is awesome. It wears all the jewelry pieces you've collected from previous boss fights, and is a beast of a fight. A bit more background would have been nice, but the fight is so fun using all you know about the game, it matters little here.
While when I fought this thing I was at a lower level, this is the beast to challenge you in the University quest line if you follow the side quests of the mages. Since I was a lower level, this thing was a beast to me, I kept summoning skeletons to harm the thing, and he'd blow them away before they touched him. Don't get me wrong, the Dragon Priests were challenging in their own right, but the atmosphere and the design of this thing just makes me remember him a little more.
Yeah he was using Bowser's body as a weapon, but it was still a really fun fight for sure. King Boo would take the empty Bowser body and use it to shoot fire, throw bombs, and just stomp on Luigi's head in an effort to take down Luigi, a threat similar to Mario. It is a good fight and a lot of great story building, even if some of the information makes no sense in context. Bowser is dead? Well okay I guess....
Probably the forgotten boss of No More Heroes. He isn't recognized much, and is he a ghost or not I'm not sure, but it is hinted that he is undead none the less. This guy floats around in an astronaut chair fighting you with lasers, and a lot of them, he is a powerful foe for sure and has a sense of mystery and wonder about him. This fight is fun to face off with and with his interesting design and character, this fight is just awesome.
Even compared to the final boss, this fight with the undead samurai is much more difficult at times, and far more interesting. The design of this character is awesome, the story and set up are cool, figuring out he is undead is awesome, and both fights with him are insanely fun though I prefer the first one more. Maybe I just want more people to play Red Steel 2? Nope, I actually like this fight that much.
The most underused, under appreciated item in Zelda history. The spinner. You use it to fight this boss and dodge his horde of undead minions. If that isn't fun enough, let's throw in a rail to rail battle with the thing's head. There is a reason this fight is one of the most iconic boss fights of Zelda history. This fight is just fun as possible and fast paced enough to stand out among the rest. I've fought many undead in many Legend of Zelda games, and none of them can compare with this fight.
